Healthy and Filling Breakfast: Guacamole egg toast

What is your favorite weekend breakfast? I know exactly what mine is! When I am at home on a Saturday or Sunday morning I almost always crave for guacamole egg toast. It’s delicious! It’s quick and easy! And it’s healthy!

I love it because it is a rather filling dish, that has a perfect balance of protein, healthy fats and carbs. It keeps me energized through the whole morning.

This morning I prepared my best guacamole so far. 

Here is the recipe!

Ingredients

2 avocados

¼ of a red onion

1 tomato

1-2 fresh red chillies

Juice from 1/2 a lime

Garlic powder

Pepper, salt

 

Instructions

Peel two avocados, chop them and put them in a medium serving bowl.

Peel red onion, deseed chilli and tomato and chop them to small pieces.

Add them to the bowl and mash it all together.

Stir in lime juice.

Add in salt, pepper and garlic powder

For the guacamole eggs toast just put two slices of toast bread into the toaster.

In the meantime for fried eggs –  add olive oil in a pan, heat it to medium heat and add eggs. I leave it a minute and then I usually flip it on the other side for a minute (or maybe even just 30 seconds) to get the whites done from both sides, but to have the yolks runny.

When the toasted bread is ready, first put guacamole on it and then put hot eggs on top of guacamole… yummy!

  2. I had a similar breakfast yesterday – guacamole quesadillas. It’s similar but I mix avocado, grilled onions, chopped tomato and cilantro. Then I heat a corn tortilla and melt some cheese, then add the guacamole to one side of the tortilla and then fold it. After it heats for a while, I flip it. It’s very filling. But this recipe also sounds wonderful. I’m bookmarking it for later. Thanks for sharing.
