It’s an extremely hot Saturday! I went to have coffee this morning with my sister and a friend and I had a small brunch in a coffee shop…a bean vege burger. I expected more, but it was ok.
And tonight another friend invited us to go out, to eat some pizza around 19h. So I still wanted to eat something in the afternoon, but just a small light lunch that will not fill me to the top.
When I checked what I have in the fridge I noticed a jar of chickpeas that I bought a few days ago and I decided to prepare a quick chickpea, cherry tomato and feta cheese salad.
I put chickpeas in a small bowl, added some parsley and minced garlic. Be careful not to add to much of both of them! I think next time I will put a little bit less parsley. 🙂 And I added feta cheese.
Then I added, one spoon of tahini and the juice of half a lemon. I have this old glass lemon squeezer that belonged to my granny and I adore it! Tahini I bought in a supermarket but you can also prepare it by yourself.
I also added cherry tomatoes and lamb’s lettuce (sometimes known as corn salad). And of course some salt and pepper.

And voila! A quick healthy lunch prepared in 5 minutes! Enjoy!
Ingredients:
4-5 spoons of chickpeas (canned)
100 grams (3.5 oz) of feta cheese
4 cherry tomatoes
1 clove of garlic
parsley
1 spoon of tahini
juice of half a lemon
olive oil
pepper, salt
